If you’re still on a mission to stick to your New Year’s resolution and eat well, then give this delicious recipe a go! Not only is it healthy, but it’s super quick to make and tastes scrumptious! The reason we fall off our ‘healthy eating’ bandwagon so easily is because eating out is much more convenient. If you just take a little bit of time to make a simple dish like this one, you will have leftovers for the week and in turn won’t be so tempted to eat out! Save money and eat healthy. Win win!
- 1 spaghetti squash
- 2 cups of broccoli
- 5 eggs
- 1 cup of onion
- 3 cloves of garlic
- Splash of milk
- Salt + pepper
- Quiche dish
Start by preheating your oven to 400 degrees F. Cut the spaghetti squash in half and place the halves face down on a parchment paper lined baking sheet. Pop it in the oven for 20 minutes. While you wait for that to cook, saute the chopped white onion and minced garlic in a drizzle of olive oil. Add broccoli. I love loads of green veggies but add to your desired taste!
Once the spaghetti squash has been in the oven for 20 minutes, shred it with a fork. It peels away very easily into spaghetti-looking-strands. Line your quiche dish with the spaghetti squash pressing firmly to ensure there are no holes in the ‘crust.’
In a separate bowl, whisk 5 eggs with a dollop of milk (add salt + pepper to taste) and then add this mixture onto the spaghetti squash crust. You can then add the broccoli/onion/garlic mix on top of that. I like to shred a little bit of extra sharp cheddar cheese on top for even more yumminess!
Pop this in the over for 30 minutes and voila!
I’ve had multiple friends hesitant to try a crustless quiche, but once they tasted this dish they were easily convinced! I hope your guests are as easily impressed 🙂
